Durslade Farm, our farm in Somerset is made up of 1,000 acres and is the home to our cattle, sheep, hives, apple orchard, walled garden and vineyard where we grow grapes for our Maid of Bruton wine.

Livestock

On the farm we have Hereford, Aberdeen Angus and Wagyu cattle and Mule and Exlana sheep. We welcome approximately 1000 lambs each season in the traditional style, with lambs born around Easter time. Our calves arrive in two blocks, during spring and autumn.

The crops we grow on the farm are chosen specifically to feed silage to our livestock and straw for bedding down in the cattle sheds during the winter months. Once the straw has been used, we clamp it to be used as fertiliser in the fields, creating a circular economy and reducing inputs.

The beef and lamb from our farm is used in our restaurants and available to purchase from our butchery counters.

Durslade Vineyard

Our vineyard sits on a gentle south-eastern slope on the edge of Bruton in Somerset. The ground is made up of limestone and clay, which are ideal growing conditions for our vines.

We have over 8,000 vines and these are Pinot Noir, Chardonnay, Pinot Meunier and Bacchus grapes. Late September and early October they are harvested by hand before being transported 5 miles down the road to Bagborough Winery. Here they were pressed, fermented and bottled ready to go to our restaurants and farm shops.

Our Hives

We have a number of hives throughout our Somerset estate. They all collect nectar from a variety of sources including our apple orchard and vineyard, giving them a distinct flavour and plays an integral in ensuring the biodiversity of our estate by pollinating our walled garden produce, crops and flowers.

We use the resulting honey in our restaurant kitchens, cocktails and a variety of products for Farm Shop.

Apple Orchard

On our Somerset estate we have three orchards of heritage apple trees. These are harvested in October, by hand and with a harvesting machine to collect the fallen apples, before they are sorted, press and fermented just 15 minutes away.

Our Medium Cider is refreshingly crisp with a full bodied flavour and is available to enjoy at our restaurants and bars as well as to purchase from Farm Shop.

Walled Garden

On the edge of Bruton is our walled garden, where we grow a wide range of fruits, vegetables, herbs and eventually cut flowers. We’re increasing the infrastructure of the garden to increase the growth of tomatoes, aubergines, peppers, salads and tender herbs.

At the end of 2024 our new composter arrived which we fill with garden waste such as trimmings, leaves and bed clearing with untreated sawdust from our wood workshop. After being matured for a few months, the compost created will be used in the garden once again.

All of the produce grown in the walled garden is delivered to our Somerset restaurant, Da Costa as well as our Farm Shops.

Foraged

We are very fortunate to have our own in-house forager, Kenny, who collects seasonal produce from our land and hedgerows all year round, before making them into a variety of products available in Farm Shop.

Due to the seasonality of the ingredients he is foraging, such as wild garlic, meadowsweet and rowan berries, each product he makes is small batch only.
